Coconut milk risotto

Ingredients (serves 4):
- 200 g Arborio rice
- 25 cl coconut milk
- 50 cl stock (broth)
- Coriander (cilantro)
- 1 onion
- Olive oil
Preparation:
- Finely slice the onion.
- Heat a little olive oil in a pan, sauté the onion for 2 minutes, then add the rice.
- Stir occasionally. When the rice turns translucent, pour in the stock and coconut milk.
- Cook until the liquid has evaporated and the rice is creamy.
- Serve in a dish and sprinkle with chopped coriander.
