‘Uru (Breadfruit) Crêpes
Crepes made with uru flour are a culinary specialty of French Polynesia. This variety of pancake is made from the flour of the uru fruit, a species of breadfruit.
The uru fruit is very rich in nutrients, including fiber, protein and vitamins, making it a popular ingredient in many Polynesian dishes. Uru fruit flour is obtained by drying and grinding the fruit pulp, then sieving it into a fine powder. This flour is then mixed with other ingredients to make pancake batter, which is then cooked on a hot griddle.
Pancakes made with uru flour are often served with honey, sugar or fresh fruit, for a sweet and tasty breakfast or dessert.

Ingredients (serves 4):
- 200 g breadfruit (uru) flour
- 1 pinch fine salt
- 50 g sugar
- 4 eggs
- 1 liter milk
- 100 g butter
Preparation:
- Make the crêpe batter by mounding the flour into a well in a mixing bowl.
- Add the salt, sugar and whole eggs, then mix in the center of the well without yet incorporating the flour.
- Gradually draw in the flour while steadily pouring in the milk as the batter thickens.
- Strain the batter through a fine sieve to eliminate any lumps.
- Stir in browned butter (beurre noisette). To make it, melt the butter in a fairly wide pan over moderate heat until it turns nut‑brown and nutty‑smelling.
- Cover the batter with plastic wrap and let it rest in a cool place for 20–30 minutes.
- Cook the crêpes and enjoy them with the toppings of your choice.
